I've seen a few tutorials on knife sharpening, and nearly all of them mentioned something about burr. What is it?

That is better, we are not HWZ.
This is a place for exercising your mental muscles.

Burr is defined as bumps after a rough cut job on metal pieces or rough lines to sand away for finer works.

Gimme a while, while I fetch a better idea.

A burr is a raised edge or small pieces of material remaining attached to a workpiece after a modification process.

It is usually an unwanted piece of material and when removed the process is called deburring.

Burrs are most commonly created after machining operations, such as grinding, drilling, milling, engraving or turning. It may be present in the form of a fine wire on the edge of a freshly sharpened tool or as a raised portion of a surface; this type of burr is commonly formed when a hammer strikes a surface.

That is because your father made a steep angle for slicing fish that kind Tongue

slicing power increase, but edge retention drop a lot Sad

Thats why those sushi chef always must sharpen their knife before using..
